Ingredients
2 lbs Fresh Mussels 1 lb Linguine or Spaghetti of your choice 1/2 cup extra virgin olive oil 6 cloves garlic, finely chopped 1 teaspoon garlic powder 1/4 teaspoon red hot pepper or just a pinch (optional) (1) 28 oz can of authentic whole San Marzano tomatoes, after opening crush by hand. (1) 8 oz. can of hunts tomato sauce 1 tablespoon oregano 10 leaves fresh basil 1 cup dry white wine, (prefer Pinot Grigio) 1 teaspoon salt and pepper to taste
Preparation
Wash the mussels in cold water and brush clean, pull off the beards if any. Pour 1/4 cup olive oil in a large pot, add garlic, salt, pepper and sauté. Add the San Marzano tomatoes, Hunts tomato sauce, oregano, garlic powder, basil, white wine, cover and cook on medium heat for 5 minutes. Once the marinara sauce is bubbling add the mussels and pour over the mussels 1/4 cup extra virgin olive oil and stir. Cover and simmer for an additional 15 minutes until all mussels have opened. Serve over your favorite pasta or this dish can be used as a mussels marinara appetizer.
