4 chicken breasts 3 cups green leaf lettuce 1 cup grape tomatoes 1 cucumber 3 cloves of garlic (thinly sliced) 1 tbsp oregano ¼ cup fresh parsley (chopped) 1 cup chicken broth 1 cup sun-dried tomatoes 1 cup heavy cream 1/2 cup parmesan cheese 16 oz angel hair pasta 1/4 cup olive oil (divided) salt and pepper to taste
Preparation
In a skillet, add ⅛ cup evoo, garlic, oregano, parsley, sauté chicken until golden; add sun-dried tomatoes, cream and chicken broth. Simmer until chicken is cooked through and sauce thickens. Cook angel hair pasta according to package instructions. Serve chicken over pasta, drizzled with sauce. Italian salad with tomatoes and cucumber, evoo and balsamic vinegar.
